Well, this recipe was more like a last minute emergency dinner thing, but turned out really well, so took the trouble to pen this down for you so that you could enjoy this as much as I did.
You need :-
1 pack 500g Spaghetti
3 medium sized ripe blanched tomatoes, peeled and finely chopped
7-8 cloves of Garlic
50g butter
20g Fresh Basil
150-200g boneless basa Fillet
Salt to taste
1 tea spoon dried Mix herbs
2 tablespoons Olive oil
Juice of one lemon
Method
- Boil the spaghetti in Water with a tea spoon of salt and 1 tablespoon olive oil. Boil till al-dente. Strain and keep aside.
- Cut the the basa Fillet in chunks and poach them in water till soft
- Add butter to a pan and add one tea spoon of oil
- Add chopped Garlic and chopped Blanched Tomatoes and half the basil and herbs and juice of one lemon. Cook till the tomatoes are soft and the mix transforms into a thick sauce.
- Add the fish and the remaining basil.
- In a serving plate keep a ladleful of spaghetti and make a depression in the middle and add the fish in tomato sauce on top
- Garnish with fresh basil leaves and a dollop of butter on top and serve
